An easy vegetarian dish with the health benefits of turmeric!
Ethiopian Cabbage Dish
- 1/2 cup olive oil
- 4 carrots, sliced roughly 1/4" thick
- 1 onion, sliced thin
- 1/2 head of cabbage, shredded
- 5 potatoes, peeled and chopped into 1" cubes
- 1 teaspoon sea salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground turmeric
- (We usually add some extra cumin and turmeric once it gets cooking, to taste)
- Heat oil in extra-large skillet or large pot over medium heat.
- Add onion and cook for 5 minutes.
- Add salt, black pepper, cumin, cabbage and carrots and cook another 10 minutes.
- Reduce heat to medium-low, add potatoes and cook another 25-30 minutes until potatoes and carrots are done. Season with additional salt and pepper to taste.
