Ethiopian Cabbage Dish

An easy vegetarian dish with the health benefits of turmeric!


Ethiopian Cabbage Dish
  • 1/2 cup olive oil
  • 4 carrots, sliced roughly 1/4" thick
  • 1 onion, sliced thin
  • 1/2 head of cabbage, shredded
  • 5 potatoes, peeled and chopped into 1" cubes
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground turmeric
  • (We usually add some extra cumin and turmeric once it gets cooking, to taste)
Directions
  1. Heat oil in extra-large skillet or large pot over medium heat.
  2. Add onion and cook for 5 minutes.
  3. Add salt, black pepper, cumin, cabbage and carrots and cook another 10 minutes.
  4. Reduce heat to medium-low, add potatoes and cook another 25-30 minutes until potatoes and carrots are done.  Season with additional salt and pepper to taste.
